    Oriental Sesame Chicken Strips
    30 Day Gourmet Revised

    Ingredients:
    3/4 cup Honey
    1/3 cup Orange juice
    3 T. Soy sauce
    2 envelopes Good Seasons Oriental Sesame Dressing Mix
    2-1/2 lbs.Boneless, skinless, chicken breast; cut in strips

    Assembly Directions:
    Mix honey, juice, soy sauce and salad dressing mix in large bowl until well blended.

    Freezing Directions:
    Place the chicken strips in a freezer bag. Pour marinade over chicken in bag. Seal. Place inside another freezer bag so that the chicken is double-bagged. Include a slip of paper with the “Serving Directions”. Freeze flat.

    Serving Directions:
    Thaw chicken and thread on skewers through each chicken strip. Broil 4 inches from heat, or grill over medium coals 8-10 minutes or until cooked through, turning frequently. You can also cook the chicken in a non-stick skillet on the stovetop.

    Comments:
    You may have to go to Woodman’s in Onalaska to get the seasoning mix.

  2. Italian Hot Beef

    For each supper swap meal, use 1 recipe with 2 pounds of chuck roast.

    For every 2 pounds of chuck roast (or chuck tender roast) mix together:

    12 oz beef broth
    1 Tblsp ketchup
    1/4 tsp Worchester sauce
    1/4 tsp Kitchen Bouquet
    4 drops Hot sauce

    Sprinkle garlic salt and pepper on roast to taste. Put in crock-pot with
    above mixture. Cook on high for 6 hours or on low for 8 hours. Shred beef with a fork and
    return to juice.

    Freeze cooled beef filling and the juice in Quart-sized freezer bags. Include buns the day of the swap.

    Italian Hot Beef Serving Instructions:
    Thaw and heat beef filling. Serve on buns with barbecue sauce or other sauce if desired.

  3. TACO PASTA SHELLS
    revised

    1 box medium shells uncooked pasta (16 oz)
    1 1/2 pounds lean ground beef
    ½ cup taco sauce
    3 ounces cream cheese, cubed
    2 teaspoons chili powder
    3/4 cup shredded Mexican cheese blend, divided
    8 oz tomato sauce

    In a large nonstick skillet over medium heat, cook beef until no longer pink; drain. Add 1/2 cup taco sauce, cream cheese and chili powder; cook and stir until blended. Stir in 1/4 cup cheese blend. Cool and bag. Include a snack-size baggie of ½ cup shredded cheese. Also include a can of tomato sauce on swap day (or put 1 cup of sauce in another baggie).

    Taco Pasta Shells Serving day instructions:
    Thaw completely. Cook pasta according to package directions. Drain and rinse. Then spread cooked pasta in bottom of baking dish coated with nonstick cooking spray. Top with the taco meat mixture. Drizzle with 1 can of tomato sause. Sprinkle with cheese. Cover pan with foil and bake at 350 degrees for 25-30 minutes or until heated through and cheese is melted. Sprinkle with tortilla chips if desired.

    Hot Ham & Cheese Sandwiches

    6 Hoagie size buns (like a 6” Subway style roll - Aldi sells these for a great price)
    1 pound sliced ham (have deli wrap in 1-pound pkgs)
    1/2 pound colby or swiss cheese slices (have deli wrap in 1/2-pound pkgs)

    Mix the following in a small bowl:
    1/3 cup softened butter
    4 tsp mustard
    2 tsp dried minced onion
    1 tsp poppy seeds
    2 tsp sugar

    Spread the above mixture on the insides of the bun. Top each roll/bun with the ham and cheese (using the full 1 pound of hame and 1/2 pound of cheese distributed evenly). Replace roll tops. Put sandwiches into freezer bags No need to double-bag. Each swapper will get 6 sandwiches.

    Hot Ham & Cheese Sandwiches Serving Day Instructions:
    Partially thaw on cookie sheet or baking stone. Open sandwich when defrosted enough to open and allow to thaw almost completely. Bake for 10-15 minutes at 350 degrees or until cheese melts and heated through. Put the sandwiches back together and serve. These are large sandwiches, so you may wish to cut in half.
