Welcome to our supper swap for busy moms, where each member prepares just one recipe and prepares it for each swapper in the group. On swap day, swappers receive one frozen meal from each member.
Homemade meals in the freezer help get families back to the dinner table and provide smiles for busy moms.

Orange chicken bites: Makes approximately 48 bites
Ingredients: 1/2 cup orange marmalade 1/2 cup ketchup 2 Tbsp white vinegar 1 Tbsp minced garlic 2 teaspoons Montreal chicken seasoning 1/4 teaspoon Chinese 5 spice powder (found in Asian section of the grocery store) 3 pounds boneless, skinless chicken breasts cut in bite sized pieces (approximately 48)
Assembly Directions: In medium saucepan, combine marmalade, ketchup, vinegar, minced garlic, Montreal seasoning and Chinese spice powder. Simmer over medium-high heat 15 minutes until thickened. Cool.
Freezing Directions: Divide chicken into labeled freezer bags (quart size for snacks, gallon size for dinner entrée). Pour cooled sauce over chicken. Seal and freeze.
Serving Directions: Thaw. Preheat oven to 400. Pour chicken and sauce onto foil lined shallow pan. Bake for 15 minutes. Turn bites and spoon sauce over bites. Bake another 10 minutes. Turn broiler to 425. Bake 5 minutes under broiler or until browned. (These can also be cooked in a skillet on the stovetop, turning several times and basting.)
1 lb ground beef ½ tsp salt ½ cup chopped onion 15 oz can tomato sauce 8 oz cottage cheese 1 Tbsp poppy seeds 1 cup sour cream 8 oz cream cheese 1/4 tsp pepper 8 oz spaghetti, linguine or other pasta (get what is inexpensive!) 1/4 cup Parmesan cheese
Sauté the beef with salt and onion in a large skillet on medium heat until the beef is no longer pink, about 15 minutes. Add tomato sauce and set aside. Combine the remaining ingredients in a medium bowl, except linguini and Parmesan cheese. Freeze each of the two mixtures in baggies. Place parmesan in a little snack baggie. Put all together in a gallon bag freezer bag. Label and freeze flat. Be sure to include the pasta on swap day.
To Serve: Thaw bags. Preheat oven to 350. Cook 8 oz linguini according to package directions and drain. While pasta is hot, mix it in to the cheese mixture in a medium bowl. Spread the linguini and cheese on the bottom of a greased casserole dish. Top with the meat mixture and sprinkle with Parmesan cheese. Bake for 30 minute or until hot and bubbly.
1 pound Box Bowtie Pasta 8 oz bag Pepperoni – stack pepperoni and cut into fourths 2-4 cloves garlic 8 oz package fresh Mushrooms, sliced 14 ½ oz. can diced tomatoes with basil, garlic & oregano 1 ½ cups heavy whipping cream ¼ tsp fresh ground black pepper Shredded Parmesan cheese
In fry pan, fry pepperoni a bit. Add garlic and mushrooms. Sauté until tender. Add tomatoes, pepper and cream. Simmer for 10 minutes, being careful not to scorch.
Cool and package in freezer bag. Double bag and include a small baggie of shredded Parmesan cheese along with a label and instructions. Don't forget the box of pasta on swap day.
Serving instructions: Thaw. Heat over low heat. Prepare bowties according to package directions. Toss pasta and sauce together at serving time. Serve with fresh Parmesan on top. Serve with a salad or green veggies.
6 Hoagie size buns (like a 6” Subway style roll - Aldi sells these for a great price) 1 pound sliced ham 1/2 pound cheddar or swiss cheese slices
Mix the following in a small bowl: 1/3 cup softened butter 4 tsp mustard 2 tsp dried minced onion 2 tsp poppy seeds 2 tsp sugar
Spread the above mixture on the insides of the bun. Top each roll/bun with 2 slices ham and 1 slice of cheese. Replace roll tops. Put sandwiches into freezer bags No need to double-bag. Each person will get 6 sandwiches.
Hot Ham & Cheese Sandwiches Serving Day Instructions: Partially thaw. Open sandwich. Place on baking sheet. Bake for 10-15 minutes at 350 degrees or until cheese melts and heated through.
Total needed for 6 supper swap meals: 36 Hoagie Rolls - approx 6" long) 6 lbs Ham 3 sticks of butter 1.5 lb Colby 1.5 lb Swiss

Poppy Beef
